Good cake is something that i need in my life, it sounds stupid, but i can't drink a brew without some form of biscuit, cake or sweet thing to partner with it. In many ways, i'm a slave to my sweet tooth but i'm not getting into this now.
To satisfy this craving, i've always been a bit of a baker. Be it cakes, flapjacks, tray bakes, biscuits, whatever... the point is that i enjoy baking. Cooking, however, has always been secondary to me. I really enjoy creating Mexican feasts, I love a good quality steak and I can't really grumble at a homemade burger. Baking i just find to be more fun, tastier and generally just a more relaxing experience over cooking.
This weekend me and my better half were hunting out where we could find a good scone and, unfortunately, all of our local places weren't open. This predicament led to a suggestion that I could make an attempt at baking some at home. A great idea that would get us scones and let's be honest, probably taste better too.
There's nothing better than a freshly baked, home-made scone is there? A quick trip to the supermarket and I had all of the ingredients I needed to get baking!
Ingredients
- 350g Self Raising Flour
- 85g Butter (cubed)
- 1 tsp of Salt
- 3 tbsp of Caster Sugar
- 1 Egg
- 175ml Milk (Warm)
- Greaseproof paper
- Raisins
How to make Scones
Before you start, pre-heat your oven to 200c if it's a fan oven or 220c if not.
- Put the flour, salt and caster sugar into a bowl.
- Add the butter and use your hands to combine the dry ingredients into a breadcrumb type texture.
- Heat the milk either on the stove or the microwave until it's warm, not hot.
- Make a well in the middle of the dry ingredients and pour the milk into the well.
- Using a knife, quickly combine the milk with the flour, etc and then stick your hands into the mix and knead the mix until it holds itself together.
- Throw some flour onto a surface and then put the mixture on top of the flour and pat into a 4cm thick patty.
- Using a 5/6cm cutter, cut the mix and place onto the pre-heated baking tray.
- Put the greaseproof paper onto the baking tray and then the scones onto the paper.
- Whisk the egg and then brush onto the top of the scones.
- Stick the scones into the oven for 10mins.
- Take them out and eat with cream and jam.
